Ingredients:

  • 4 Grouper Fillets (approx. 6 oz/170g each)
  • 1 tsp Kosher Salt
  • ½ tsp Freshly Ground Black Pepper
  • 8 Tbsp (1 stick) Unsalted Butter, softened to room temperature
  • 4 large cloves Fresh Garlic, finely minced
  • Zest of 1 large lemon
  • 2 Tbsp Fresh Lemon Juice
  • ¼ cup packed Fresh Parsley, finely chopped
  • ½ tsp Dried Paprika (Optional)
  • 1 Tbsp Olive Oil
  • 4 thin Fresh Lemon Slices (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven. Line the baking dish with parchment paper and lightly grease with olive oil to prevent sticking.
  2. In a small mixing bowl, combine the softened butter, minced garlic, lemon zest, lemon juice, chopped parsley, and paprika (if using). Mix vigorously until all ingredients are evenly incorporated. Set aside 1 tablespoon of this butter mixture for later finishing.
  3. Pat the grouper fillets completely dry using kitchen paper. Season both sides of the fillets generously with salt and pepper. Evenly spread the remaining compound butter mixture over the top surface and sides of each grouper fillet.
  4. Arrange the buttered fillets in the prepared baking dish. If desired, place a thin lemon slice on top of each fillet. Bake for 12–15 minutes, or until the fish is opaque white and flakes easily. The internal temperature should read 145°F (63°C) at the thickest part.
  5. Once cooked, remove the dish from the oven and let the fish rest in the pan for 3 minutes. Drizzle the reserved 1 tablespoon of compound butter (melted slightly if necessary) and the glorious pan juices over the fillets before serving.
