Ingredients:

  • 1.5 lb white fish fillets (Cod, Halibut, or Tilapia)
  • 1 medium lemon, thinly sliced into rounds
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp dried oregano
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Arrange the lemon slices in a single layer on the parchment paper to create a bed for the fish.
  3. In a small mixing bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, lemon zest, and dried oregano.
  4. Pat the fish fillets completely dry with paper towels and place them on top of the lemon slices.
  5. Spoon the garlic butter mixture evenly over each fillet, ensuring the sides are coated, then season with salt and pepper.
  6. Bake in the center rack of the oven for 12–15 minutes until the butter is bubbling and the flesh is opaque and flakes easily.
  7. Remove from oven and let the fish rest on the lemon slices for 2 minutes before garnishing with chopped fresh parsley.
