Ingredients:

  • 1.5 lbs dolphin fish (mahi mahi) fillets
  • 2 tbsp melted unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • 1/2 cup Panko breadcrumbs
  • 2 tbsp melted unsalted butter
  • 1 tbsp fresh parsley, minced
  • 1 clove garlic, minced
  • 1/2 lemon, juiced

Instructions:

  1. Pat the dolphin fish fillets completely dry with paper towels. Note: This is the most important step for a crispy crust.
  2. Place the fillets on a parchment lined baking sheet.
  3. Brush the fillets with 2 tablespoons of melted butter.
  4. Season evenly with salt, pepper, and paprika.
  5. In a small bowl, combine panko breadcrumbs, 2 tablespoons of melted butter, minced garlic, parsley, and lemon juice. Mix until the crumbs are evenly moistened.
  6. Press a generous layer of the panko mixture onto the top of each fillet, pressing down slightly to adhere.
  7. Bake in a preheated 400°F (200°C) oven for 12–15 minutes until the crust is golden and the fish is opaque.
  8. Check internal temperature. Remove from oven when it hits 140°F (60°C).
  9. Remove from oven and let the fish rest for 3 minutes to reach a final internal temperature of 145°F (63°C).
