Ingredients:
- 1.5 lbs dolphin fish (mahi mahi) fillets
- 2 tbsp melted unsalted butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp paprika
- 1/2 cup Panko breadcrumbs
- 2 tbsp melted unsalted butter
- 1 tbsp fresh parsley, minced
- 1 clove garlic, minced
- 1/2 lemon, juiced
Instructions:
- Pat the dolphin fish fillets completely dry with paper towels. Note: This is the most important step for a crispy crust.
- Place the fillets on a parchment lined baking sheet.
- Brush the fillets with 2 tablespoons of melted butter.
- Season evenly with salt, pepper, and paprika.
- In a small bowl, combine panko breadcrumbs, 2 tablespoons of melted butter, minced garlic, parsley, and lemon juice. Mix until the crumbs are evenly moistened.
- Press a generous layer of the panko mixture onto the top of each fillet, pressing down slightly to adhere.
- Bake in a preheated 400°F (200°C) oven for 12–15 minutes until the crust is golden and the fish is opaque.
- Check internal temperature. Remove from oven when it hits 140°F (60°C).
- Remove from oven and let the fish rest for 3 minutes to reach a final internal temperature of 145°F (63°C).
