Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1 teaspoon Italian seasoning (5g)
  • 1 teaspoon garlic powder (5g)
  • ½ teaspoon salt (2g)
  • ½ teaspoon black pepper (2g)
  • 2 medium tomatoes, sliced (about 1.5 cups / 220g)
  • 8 oz (225g) fresh mozzarella cheese, sliced
  • ¼ cup fresh basil leaves, torn
  • 2 tablespoons balsamic glaze (30ml)
  • 2 tablespoons olive oil (30ml)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Place the seasoned chicken breasts in a baking dish.
  4. Top each piece of chicken with tomato slices followed by mozzarella cheese.
  5. Drizzle olive oil over the dish and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  6. In the last 5 minutes of baking, add torn basil leaves on top.
  7. Once out of the oven, drizzle with balsamic glaze before serving.
