Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1 teaspoon Italian seasoning (5g)
- 1 teaspoon garlic powder (5g)
- ½ teaspoon salt (2g)
- ½ teaspoon black pepper (2g)
- 2 medium tomatoes, sliced (about 1.5 cups / 220g)
- 8 oz (225g) fresh mozzarella cheese, sliced
- ¼ cup fresh basil leaves, torn
- 2 tablespoons balsamic glaze (30ml)
- 2 tablespoons olive oil (30ml)
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
- Place the seasoned chicken breasts in a baking dish.
- Top each piece of chicken with tomato slices followed by mozzarella cheese.
- Drizzle olive oil over the dish and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- In the last 5 minutes of baking, add torn basil leaves on top.
- Once out of the oven, drizzle with balsamic glaze before serving.
