Ingredients:

  • oz wheel of Brie Cheese (full fat, rind on)
  • /4 cup Fig Jam or Fig Preserves
  • /4 cup Pecan Halves or Chopped Pecans
  • teaspoon Fresh Thyme Leaves
  • Pinch of Flaky Sea Salt (e.g., Maldon)
  • Thinly sliced baguette, crackers, or apple slices (for serving)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a small baking sheet or oven-safe serving dish with parchment paper.
  2. Unwrap the Brie wheel entirely and place it, rind-side down, onto the prepared baking sheet or dish. Optional: Lightly score the top rind in a diamond pattern.
  3. In a small bowl, gently mix the fig jam, pecans, and fresh thyme leaves until combined.
  4. Evenly spread the fig and pecan mixture over the entire top surface of the Brie wheel, ensuring the topping covers the surface right up to the edges of the rind.
  5. Place the cheese in the preheated oven and bake for 12 to 15 minutes, or until the jam is bubbling and the cheese yields easily when lightly pressed on the side.
  6. Carefully remove the baked Brie from the oven and let it rest for 3–5 minutes before serving to allow the structure to stabilize slightly.
  7. Sprinkle lightly with flaky sea salt just before serving alongside thinly sliced baguette, crackers, or crisp apple slices for dipping.
