- 2 teaspoons baking powder (8g)

- 1 teaspoon ground cinnamon (4g)
- ½ teaspoon ground nutmeg (2g)
- 1 cup milk (240ml)
- ½ cup unsweetened applesauce (120g)
- 2 large eggs
- ¼ cup maple syrup (60ml)
- 1 teaspoon vanilla extract (5ml)
- 1 cup chopped apples or berries (150g)
- ½ cup chopped nuts (e.g., walnuts or pecans) (75g)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine rolled oats, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together milk, applesauce, eggs, maple syrup, and vanilla extract until well blended.
- Pour the wet mixture into the dry ingredients, stirring until just combined.
- Gently fold in chopped apples or berries if using.
- Pour the oatmeal mixture into a greased 9x13 inch baking dish.
- Bake in the preheated oven for 30 minutes or until golden and the center is set.
- Allow to cool slightly before serving. Drizzle with maple syrup or top with yogurt if desired.
