  • 1 teaspoon ground cinnamon (4g)
  • ½ teaspoon ground nutmeg (2g)
  • 1 cup milk (240ml)
  • ½ cup unsweetened applesauce (120g)
  • 2 large eggs
  • ¼ cup maple syrup (60ml)
  • 1 teaspoon vanilla extract (5ml)
  • 1 cup chopped apples or berries (150g)
  • ½ cup chopped nuts (e.g., walnuts or pecans) (75g)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together milk, applesauce, eggs, maple syrup, and vanilla extract until well blended.
  4. Pour the wet mixture into the dry ingredients, stirring until just combined.
  5. Gently fold in chopped apples or berries if using.
  6. Pour the oatmeal mixture into a greased 9x13 inch baking dish.
  7. Bake in the preheated oven for 30 minutes or until golden and the center is set.
  8. Allow to cool slightly before serving. Drizzle with maple syrup or top with yogurt if desired.
