Ingredients:
- 4 sea trout fillets
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh dill, for garnish
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced
Instructions:
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
- Place the sea trout fillets in a baking dish and pour the marinade over them. Let them sit for about 15 minutes.
- Scatter cherry tomatoes and zucchini slices around the fish in the baking dish.
- Bake in the preheated oven for about 15–20 minutes or until the fish is cooked through and flakes easily with a fork.
- Remove from oven; garnish with fresh dill before serving.
