Ingredients:

  • 4 sea trout fillets
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh dill, for garnish
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
  3. Place the sea trout fillets in a baking dish and pour the marinade over them. Let them sit for about 15 minutes.
  4. Scatter cherry tomatoes and zucchini slices around the fish in the baking dish.
  5. Bake in the preheated oven for about 15–20 minutes or until the fish is cooked through and flakes easily with a fork.
  6. Remove from oven; garnish with fresh dill before serving.
