Ingredients:
- 1 cup day-old French bread, cubed
- 1/2 cup shrimp, peeled and chopped (raw or cooked)
- 1/2 cup crab meat (fresh or canned)
- 1/2 cup scallops, chopped (raw or cooked)
- 1/4 cup onion, finely diced
- 1/4 cup celery, finely diced
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning (or seafood seasoning of choice)
- (Optional) Salt and pepper to taste
- (Optional) A pinch of red pepper flakes for heat
- (Optional) Chicken or fish broth as needed
Instructions:
- Preheat your oven to 350°F (175°C). Place the cubed French bread in a large mixing bowl.
- In a medium skillet over medium heat, melt the butter. Add the onion, celery, and garlic. Sauté for about 5 minutes, until softened and fragrant.
- Pour the sautéed vegetable mixture over the bread cubes. Add in the chopped shrimp, crab meat, scallops, fresh parsley, lemon juice, Old Bay seasoning, salt & pepper (and red pepper flakes if using).
- Gradually add chicken or fish broth to moisten your stuffing as needed—start with about a quarter-cup but adjust based on desired moisture level.
- Toss all ingredients together gently until well combined; do not overmix as this can make it tough.
- Transfer your stuffing into a greased baking dish. Spread evenly across the dish and cover loosely with aluminum foil. Bake in preheated oven for about 20 minutes covered to allow flavors to meld.
- Remove foil and bake for an additional 10 minutes until lightly golden on top.
- Remove from oven and let cool slightly before serving.
