Ingredients:

  • 1 cup day-old French bread, cubed
  • 1/2 cup shrimp, peeled and chopped (raw or cooked)
  • 1/2 cup crab meat (fresh or canned)
  • 1/2 cup scallops, chopped (raw or cooked)
  • 1/4 cup onion, finely diced
  • 1/4 cup celery, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning (or seafood seasoning of choice)
  • (Optional) Salt and pepper to taste
  • (Optional) A pinch of red pepper flakes for heat
  • (Optional) Chicken or fish broth as needed

Instructions:

  1. Preheat your oven to 350°F (175°C). Place the cubed French bread in a large mixing bowl.
  2. In a medium skillet over medium heat, melt the butter. Add the onion, celery, and garlic. Sauté for about 5 minutes, until softened and fragrant.
  3. Pour the sautéed vegetable mixture over the bread cubes. Add in the chopped shrimp, crab meat, scallops, fresh parsley, lemon juice, Old Bay seasoning, salt & pepper (and red pepper flakes if using).
  4. Gradually add chicken or fish broth to moisten your stuffing as needed—start with about a quarter-cup but adjust based on desired moisture level.
  5. Toss all ingredients together gently until well combined; do not overmix as this can make it tough.
  6. Transfer your stuffing into a greased baking dish. Spread evenly across the dish and cover loosely with aluminum foil. Bake in preheated oven for about 20 minutes covered to allow flavors to meld.
  7. Remove foil and bake for an additional 10 minutes until lightly golden on top.
  8. Remove from oven and let cool slightly before serving.
