Ingredients:

  • 2 (6 oz) salmon fillets, skin-on (170 g each)
  • 1 tablespoon olive oil (15 mL)
  • 1 teaspoon lemon juice (5 mL)
  • Salt and pepper to taste
  • ½ cup shelled pistachios, finely chopped (70 g)
  • ¼ cup breadcrumbs (30 g)
  • 1 tablespoon fresh parsley, chopped (15 g)
  • Zest of 1 lemon
  • 1 tablespoon unsalted butter, melted (14 g)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Line the baking sheet with parchment paper for easy cleanup.
  3. Place salmon fillets on the baking sheet, skin-side down. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  4. In a mixing bowl, combine chopped pistachios, breadcrumbs, parsley, lemon zest, and melted butter.
  5. Evenly distribute the pistachio mixture over the top of each salmon fillet, pressing down lightly.
  6. Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the salmon is cooked through and the crust is golden.
  7. Remove from the oven and let rest for 2 minutes before serving.
