Ingredients:
- 2 (6 oz) salmon fillets, skin-on (170 g each)
- 1 tablespoon olive oil (15 mL)
- 1 teaspoon lemon juice (5 mL)
- Salt and pepper to taste
- ½ cup shelled pistachios, finely chopped (70 g)
- ¼ cup breadcrumbs (30 g)
- 1 tablespoon fresh parsley, chopped (15 g)
- Zest of 1 lemon
- 1 tablespoon unsalted butter, melted (14 g)
Instructions:
- Preheat the oven to 400°F (200°C).
- Line the baking sheet with parchment paper for easy cleanup.
- Place salmon fillets on the baking sheet, skin-side down. Drizzle with olive oil and lemon juice. Season with salt and pepper.
- In a mixing bowl, combine chopped pistachios, breadcrumbs, parsley, lemon zest, and melted butter.
- Evenly distribute the pistachio mixture over the top of each salmon fillet, pressing down lightly.
- Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the salmon is cooked through and the crust is golden.
- Remove from the oven and let rest for 2 minutes before serving.
