Ingredients:
- 1 ½ cups (190 g) all-purpose flour
- 1 tsp (5 g) baking powder
- ½ tsp (3 g) salt
- 2 tbsp (30 g) unsalted butter, cold and cubed
- ½ cup (120 ml) cold water
- 1 cup (150 g) cooked fish (cod, salmon, or your preferred fish), flaked
- ¼ cup (30 g) finely chopped onion
- ¼ cup (30 g) bell pepper, finely chopped
- 1 clove garlic, minced
- 2 tbsp (30 ml) fresh lemon juice
- 2 tbsp (15 g) fresh dill or parsley, chopped
- Salt and pepper to taste
- 1 large egg, beaten (for egg wash)
Instructions:
- In a mixing bowl, combine flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms.
- Knead briefly, then wrap in plastic and chill for 10 minutes.
- In another bowl, mix flaked fish, onion, bell pepper, garlic, lemon juice, dill, salt, and pepper until well combined.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the dough on a lightly floured surface into a rectangle.
- Spread the filling evenly over the dough, leaving a 1-inch border.
- Roll up the dough tightly from one long side and pinch the edges to seal.
- Cut into 8 equal pieces and place seam-side down on the baking sheet.
- Brush the tops with beaten egg.
- Bake for 15-20 minutes, until golden brown and cooked through.
- Allow to cool slightly before serving. Enjoy warm!
