Ingredients:

  • 1 ½ cups (190 g) all-purpose flour
  • 1 tsp (5 g) baking powder
  • ½ tsp (3 g) salt
  • 2 tbsp (30 g) unsalted butter, cold and cubed
  • ½ cup (120 ml) cold water
  • 1 cup (150 g) cooked fish (cod, salmon, or your preferred fish), flaked
  • ¼ cup (30 g) finely chopped onion
  • ¼ cup (30 g) bell pepper, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp (30 ml) fresh lemon juice
  • 2 tbsp (15 g) fresh dill or parsley, chopped
  • Salt and pepper to taste
  • 1 large egg, beaten (for egg wash)

Instructions:

  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Knead briefly, then wrap in plastic and chill for 10 minutes.
  5. In another bowl, mix flaked fish, onion, bell pepper, garlic, lemon juice, dill, salt, and pepper until well combined.
  6. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  7. Roll out the dough on a lightly floured surface into a rectangle.
  8. Spread the filling evenly over the dough, leaving a 1-inch border.
  9. Roll up the dough tightly from one long side and pinch the edges to seal.
  10. Cut into 8 equal pieces and place seam-side down on the baking sheet.
  11. Brush the tops with beaten egg.
  12. Bake for 15-20 minutes, until golden brown and cooked through.
  13. Allow to cool slightly before serving. Enjoy warm!
