Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1/4 cup (60ml) ice water
  • 1 pound (450g) white fish (like cod or tilapia), skinless and boneless
  • 1 cup (150g) mixed seasonal vegetables (e.g., bell peppers, zucchini, and spinach)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill or parsley
  • Salt and pepper, to taste
  • 1 large egg (for egg wash)

Instructions:

  1. In a bowl, combine flour and salt.
  2. Cut in butter until crumbly; gradually add ice water until dough forms.
  3. Wrap dough in plastic wrap; chill in the refrigerator for at least 15 minutes.
  4. Heat olive oil in a skillet; sauté onion and garlic until fragrant.
  5. Add mixed vegetables; cook until slightly tender.
  6. Add fish, dill, salt, and pepper; cook until fish is opaque and flakes easily. Remove from heat.
  7. Preheat oven to 400°F (200°C).
  8. Roll out dough on a floured surface; cut into rectangles.
  9. Place filling mixture in the center of each rectangle; fold over and seal edges with a fork.
  10. Place on a baking sheet lined with parchment paper.
  11. Brush tops with beaten egg.
  12. Bake for 20-25 minutes or until golden brown.
