Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, cold and cubed
- 1/4 cup (60ml) ice water
- 1 pound (450g) white fish (like cod or tilapia), skinless and boneless
- 1 cup (150g) mixed seasonal vegetables (e.g., bell peppers, zucchini, and spinach)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried dill or parsley
- Salt and pepper, to taste
- 1 large egg (for egg wash)
Instructions:
- In a bowl, combine flour and salt.
- Cut in butter until crumbly; gradually add ice water until dough forms.
- Wrap dough in plastic wrap; chill in the refrigerator for at least 15 minutes.
- Heat olive oil in a skillet; sauté onion and garlic until fragrant.
- Add mixed vegetables; cook until slightly tender.
- Add fish, dill, salt, and pepper; cook until fish is opaque and flakes easily. Remove from heat.
- Preheat oven to 400°F (200°C).
- Roll out dough on a floured surface; cut into rectangles.
- Place filling mixture in the center of each rectangle; fold over and seal edges with a fork.
- Place on a baking sheet lined with parchment paper.
- Brush tops with beaten egg.
- Bake for 20-25 minutes or until golden brown.
