Ingredients:

  • 1/2 cup Full-Fat Mayonnaise (120 g)
  • 1/2 cup Plain Greek Yogurt, 5% or higher fat (120 g)
  • 2 Tablespoons Fresh Lime Juice (30 ml)
  • 1 large clove Garlic, finely minced (~5 g)
  • 1/4 cup Fresh Coriander (Cilantro), finely chopped (5 g)
  • 1/2 teaspoon Smoked Paprika
  • 1/4 teaspoon Ground Cumin
  • 1 teaspoon Hot Sauce (e.g., Cholula or Sriracha)
  • 1/2 teaspoon Fine Sea Salt
  • 1/4 teaspoon Freshly Cracked Black Pepper

Instructions:

  1. Prepare Aromatics: Finely mince the garlic clove (using a microplane is recommended for a smooth sauce). Finely chop the fresh coriander. Juice the fresh lime, ensuring no seeds make it into the sauce.
  2. Combine the Cream Base: In a medium bowl, combine the full-fat mayonnaise and the Greek yogurt (or sour cream/crema). Whisk vigorously until the base is completely smooth and homogenous.
  3. Mix in Seasoning and Spices: Add the lime juice, minced garlic, chopped coriander, smoked paprika, ground cumin, hot sauce, salt, and pepper to the cream base. Whisk thoroughly until all ingredients are fully incorporated and the sauce is a pale, creamy orange/pink hue.
  4. Chill and Adjust: Cover the sauce and place it in the refrigerator for a minimum of 30 minutes. This chilling period allows the flavors to mellow and integrate. After chilling, taste the sauce and adjust salt, pepper, or lime juice to achieve a perfect balance. Serve immediately or keep refrigerated for up to 5 days.
