- 1/2 cup maple syrup (120ml / 4 fl oz)
- 1/4 cup unsalted butter, melted (60g / 2 oz)
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract (5ml)
- 1 teaspoon baking powder (5ml)
- 1/2 teaspoon salt (2.5ml)
- 1/2 cup all-purpose flour (60g / 2 oz)
- 1/4 cup rolled oats (25g / 0.9 oz)
- 1/4 cup brown sugar, packed (30g / 1 oz)
- 1/4 teaspoon ground cinnamon (1.25ml)
- 1/4 cup unsalted butter, cold and cubed (60g / 2 oz)
Instructions:
- Prepare the Apple Filling: In a medium bowl, combine diced apples, melted butter, brown sugar, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.
- Prepare the Oatmeal Base: In a large bowl, whisk together rolled oats, milk, maple syrup, melted butter, eggs, vanilla extract, baking powder, and salt.
- Assemble the Baked Oatmeal: Pour the oatmeal mixture into the prepared baking dish. Spread the apple filling evenly over the oatmeal.
- Prepare the Crumble Topping: In a small bowl, combine flour, oats, brown sugar, and cinnamon. Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Add the Crumble Topping: Sprinkle the crumble topping evenly over the apple filling and oatmeal.
- Bake: Bake in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
