Ingredients:

  • 1 lb (450g) firm white fish (Cod or Halibut) or peeled/deveined shrimp
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 tbsp (15ml) avocado oil
  • 1 cup (115g) superfine almond flour
  • 1/4 cup (30g) unsweetened coconut flour
  • 1 tsp (5g) smoked paprika
  • 1/2 tsp (2g) garlic powder
  • 1/4 tsp (1g) onion powder
  • 2 tbsp (14g) ground flaxseed meal
  • 5 tbsp (75ml) filtered water
  • 1 tsp (5ml) fresh lemon juice

Instructions:

  1. Pat the seafood completely dry with a paper towel. Cut the fish into 1-inch (2.5cm) cubes.
  2. Toss the seafood in a bowl with avocado oil, sea salt, and pepper until evenly coated.
  3. In a mixing bowl, whisk together the flaxseed meal, water, and lemon juice; let it sit for 3 minutes until it thickens into a gel.
  4. In a separate bowl, combine almond flour, coconut flour, paprika, garlic powder, and onion powder.
  5. Dip each piece of seafood into the flax binder, shaking off the excess, then press firmly into the flour mixture until fully encapsulated.
  6. Line the air fryer basket with parchment. Arrange the bites in a single layer.
  7. Cook at 400°F (200°C) for 12–15 minutes, flipping halfway through, until they reach a mahogany-colored glow and feel firm to the touch.
