Ingredients:
- 1 lb (450g) firm white fish (Cod or Halibut) or peeled/deveined shrimp
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 1 tbsp (15ml) avocado oil
- 1 cup (115g) superfine almond flour
- 1/4 cup (30g) unsweetened coconut flour
- 1 tsp (5g) smoked paprika
- 1/2 tsp (2g) garlic powder
- 1/4 tsp (1g) onion powder
- 2 tbsp (14g) ground flaxseed meal
- 5 tbsp (75ml) filtered water
- 1 tsp (5ml) fresh lemon juice
Instructions:
- Pat the seafood completely dry with a paper towel. Cut the fish into 1-inch (2.5cm) cubes.
- Toss the seafood in a bowl with avocado oil, sea salt, and pepper until evenly coated.
- In a mixing bowl, whisk together the flaxseed meal, water, and lemon juice; let it sit for 3 minutes until it thickens into a gel.
- In a separate bowl, combine almond flour, coconut flour, paprika, garlic powder, and onion powder.
- Dip each piece of seafood into the flax binder, shaking off the excess, then press firmly into the flour mixture until fully encapsulated.
- Line the air fryer basket with parchment. Arrange the bites in a single layer.
- Cook at 400°F (200°C) for 12–15 minutes, flipping halfway through, until they reach a mahogany-colored glow and feel firm to the touch.
