Ingredients:

  • 2 lbs cod fillets (wild-caught, skinless)
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1/4 cup fresh lemon juice
  • 2 tbsp fresh lime juice
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh dill, chopped
  • 1 lemon, sliced into rounds

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the cod fillets completely dry with a paper towel.
  3. Place fillets on the tray and brush both sides with 1 tbsp of olive oil, then season evenly with sea salt and black pepper.
  4. In a small bowl, whisk together the remaining olive oil, lemon juice, lime juice, minced garlic, parsley, and dill.
  5. Spoon the citrus mixture generously over each fillet, pressing the garlic and herbs into the flesh.
  6. Arrange lemon slices on top of each piece of fish.
  7. Bake on the center rack for 12–15 minutes until the fish is opaque white and flakes easily with a fork, or until an internal temperature of 140°F (60°C) is reached.
