Ingredients:
- 2 lbs cod fillets (wild-caught, skinless)
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1/4 cup fresh lemon juice
- 2 tbsp fresh lime juice
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh dill, chopped
- 1 lemon, sliced into rounds
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the cod fillets completely dry with a paper towel.
- Place fillets on the tray and brush both sides with 1 tbsp of olive oil, then season evenly with sea salt and black pepper.
- In a small bowl, whisk together the remaining olive oil, lemon juice, lime juice, minced garlic, parsley, and dill.
- Spoon the citrus mixture generously over each fillet, pressing the garlic and herbs into the flesh.
- Arrange lemon slices on top of each piece of fish.
- Bake on the center rack for 12–15 minutes until the fish is opaque white and flakes easily with a fork, or until an internal temperature of 140°F (60°C) is reached.
