Ingredients:

  • 2 Ahi Yellowfin Tuna Steaks (170g each), at least 2.5 cm thick
  • 15 ml (1 tbsp) avocado oil
  • 3 g (0.5 tsp) fine sea salt
  • 18 g (2 tbsp) black sesame seeds
  • 18 g (2 tbsp) white sesame seeds
  • 2 g (1 tsp) ground ginger
  • 1 g (0.5 tsp) garlic powder
  • 30 ml (2 tbsp) Kewpie Mayo
  • 5 g (1 tsp) wasabi paste
  • 5 ml (1 tsp) fresh lime juice

Instructions:

  1. Dry the tuna. Use a paper towel to press every bit of moisture off the surface of the 170g tuna steaks.
  2. Oil the fish. Rub the 15 ml of avocado oil over all sides of the steaks until they have a glossy, even sheen.
  3. Mix the rub. Combine the white and black sesame seeds, ginger, garlic powder, and sea salt in a shallow bowl.
  4. Encrust the steaks. Press the tuna firmly into the seed mixture until no pink flesh is visible on the top or bottom.
  5. Preheat the air fryer. Set your machine to 200°C (400°F) and let it run for 5 minutes.
  6. Air fry the tuna. Place the steaks in the basket and cook for 2 minutes until the seeds smell toasted and fragrant.
  7. Flip carefully. Turn the steaks over using silicone tipped tongs to avoid knocking off the crust.
  8. Finish the sear. Cook for another 2 minutes until the exterior is golden and the internal temp hits 46°C (115°F).
  9. Whisk the sauce. Stir together the Kewpie mayo, wasabi, and lime juice while the fish rests.
  10. Rest and slice. Let the tuna sit for 2 minutes until the juices settle and the crust firms up before slicing with a very sharp knife.
