Ingredients:

  • 2 bone-in, skin-on turkey thighs (approx. 1 lb each)
  • 1.5 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper

Instructions:

  1. Pat the turkey thighs excessively dry with paper towels to remove all surface moisture. Let them sit at room temperature for 15 minutes.
  2. In a small mixing bowl, whisk together the extra virgin olive oil, smoked paprika, garlic powder, onion powder, dried thyme, salt, and pepper to create a thick spice paste.
  3. Massage the spice paste over the entirety of the turkey thighs, ensuring coverage under the skin where possible to trap internal juices.
  4. Place the thighs in the air fryer basket skin-side up. Ensure there is space between them for airflow.
  5. Set the air fryer to 375°F (190°C) and cook for 25–30 minutes. Do not flip the meat.
  6. Use a digital meat thermometer to check for an internal temperature of 165°F (74°C) at the thickest part of the thigh before removing.
