Ingredients:
- 1 pound (454g) frozen shrimp, peeled and deveined
- 2 tablespoons (30ml) olive oil
- 4 cloves garlic, minced
- 1/4 cup (60ml) dry white wine or chicken broth
- 4 tablespoons (57g) unsalted butter, cut into small cubes
- 2 tablespoons (30ml) lemon juice, freshly squeezed
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup (15g) fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions:
- Ensure shrimp is loosely frozen. Place the shrimp in a bowl of cold water and defrost for 3-4 minutes.
- Pat the defrosted shrimp dry with paper towels. In a small bowl, toss shrimp with olive oil, salt, and pepper.
- Preheat air fryer to 400°F (200°C) if required by the model. Arrange shrimp in a single layer in the air fryer basket, being careful not to overcrowd.
- Air fry for 4 minutes. Flip the shrimp and continue cooking for 4-6 minutes, or until pink and opaque. Don't overcook!
- While shrimp is cooking, melt butter in a skillet. Add garlic and sauté until fragrant (about 1 minute).
- Stir in white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 2 minutes, or until slightly reduced.
- Add cooked shrimp to the skillet with the sauce. Toss to coat.
- Stir in parsley and red pepper flakes (if using). Serve immediately.
