Ingredients:
- 2 (6-oz) salmon fillets, center-cut
- 1 tbsp extra virgin olive oil
- 1 tsp brown sugar
- 1 tsp smoked paprika
- 0.5 tsp garlic powder
- 0.5 tsp kosher salt
- 0.25 tsp freshly cracked black pepper
- 0.125 tsp cayenne pepper
- 0.5 lemon, for zest
Instructions:
- Remove salmon from the refrigerator 15 minutes before cooking. Use paper towels to pat the fillets completely dry on all sides to ensure a crispy sear.
- Brush all sides of the salmon fillets evenly with the extra virgin olive oil.
- In a small bowl, whisk together the brown sugar, smoked paprika, garlic powder, salt, black pepper, and cayenne. Press the rub firmly into the flesh side of the salmon to form an even coating.
- Preheat the air fryer to 400°F (200°C). Place the fillets in the basket, skin-side down.
- Air fry at 400°F for 8 to 10 minutes. At the 8-minute mark, use an instant-read thermometer to check for an internal temperature of 145°F (63°C).
- Remove the salmon and let it rest for 3 minutes to allow carryover cooking to reach a final temperature of 145°F (63°C). Finish with fresh lemon zest before serving.
