Ingredients:

  • 4 (6 oz) cod fillets
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp dried oregano
  • 2 large eggs
  • 1 tbsp fresh lemon juice

Instructions:

  1. Pat each cod fillet bone-dry with paper towels to remove excess moisture, then season lightly with salt and pepper.
  2. Prepare the dredging station: in one bowl, beat the eggs with lemon juice; in a second bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, and dried oregano.
  3. Dip each fillet into the egg mixture, allowing excess to drip off, then press firmly into the Parmesan Panko mixture until fully coated.
  4. Lightly brush the air fryer basket with olive oil and place fillets in a single layer, ensuring space between them for air circulation.
  5. Air fry at 400°F (200°C) for 6 minutes.
  6. Carefully flip the fillets with tongs and cook for another 5–6 minutes until the crust is deep golden brown and the internal temperature reaches 145°F (63°C).
