Ingredients:
- 4 (6 oz) cod fillets
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 cup panko breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp dried oregano
- 2 large eggs
- 1 tbsp fresh lemon juice
Instructions:
- Pat each cod fillet bone-dry with paper towels to remove excess moisture, then season lightly with salt and pepper.
- Prepare the dredging station: in one bowl, beat the eggs with lemon juice; in a second bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, and dried oregano.
- Dip each fillet into the egg mixture, allowing excess to drip off, then press firmly into the Parmesan Panko mixture until fully coated.
- Lightly brush the air fryer basket with olive oil and place fillets in a single layer, ensuring space between them for air circulation.
- Air fry at 400°F (200°C) for 6 minutes.
- Carefully flip the fillets with tongs and cook for another 5–6 minutes until the crust is deep golden brown and the internal temperature reaches 145°F (63°C).
