Ingredients:

  • 1 lb cod fillets, patted dry
  • 1/2 tsp fine sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp paprika
  • 1 large egg, beaten
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp olive oil
  • oil spray, as needed

Instructions:

  1. Pat the cod fillets thoroughly with paper towels to remove excess moisture. Season both sides of the fish with salt, pepper, and paprika.
  2. In a shallow bowl, whisk together the beaten egg, Dijon mustard, and lemon juice.
  3. In a second shallow bowl, combine panko breadcrumbs, garlic powder, and onion powder. Drizzle in the olive oil and toss with a fork until the crumbs are evenly moistened.
  4. Dip each fillet into the egg mixture, letting the excess drip off, then press firmly into the panko mixture until completely coated on all sides.
  5. Preheat the air fryer to 400°F (200°C).
  6. Place the fillets in the air fryer basket in a single layer, ensuring they do not touch. Lightly spray the tops with oil spray.
  7. Cook for 10–12 minutes, flipping halfway through, until the crust is mahogany-colored and the fish flakes easily with a fork.
