Ingredients:
- 1 lb cod fillets, patted dry
- 1/2 tsp fine sea salt
- 1/4 tsp cracked black pepper
- 1/2 tsp paprika
- 1 large egg, beaten
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp olive oil
- oil spray, as needed
Instructions:
- Pat the cod fillets thoroughly with paper towels to remove excess moisture. Season both sides of the fish with salt, pepper, and paprika.
- In a shallow bowl, whisk together the beaten egg, Dijon mustard, and lemon juice.
- In a second shallow bowl, combine panko breadcrumbs, garlic powder, and onion powder. Drizzle in the olive oil and toss with a fork until the crumbs are evenly moistened.
- Dip each fillet into the egg mixture, letting the excess drip off, then press firmly into the panko mixture until completely coated on all sides.
- Preheat the air fryer to 400°F (200°C).
- Place the fillets in the air fryer basket in a single layer, ensuring they do not touch. Lightly spray the tops with oil spray.
- Cook for 10–12 minutes, flipping halfway through, until the crust is mahogany-colored and the fish flakes easily with a fork.
