Ingredients:

  • 3 tbsp (52g) white miso paste
  • 2 tbsp (30ml) mirin
  • 2 tbsp (30ml) sake
  • 1 tbsp (12g) white granulated sugar
  • 4 (6 oz / 170g) black cod or Atlantic cod fillets
  • 1 tbsp (15ml) neutral oil

Instructions:

  1. In a small bowl, combine the white miso, mirin, sake, and sugar. Whisk vigorously until the sugar has dissolved and the mixture is a smooth, uniform paste.
  2. Place the cod fillets in a Ziploc bag and pour the glaze over them. Massage the bag to ensure every inch of the fish is coated. Seal and refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).
  3. Preheat the air fryer to 400°F (200°C) for 3 minutes. Lightly grease the basket with neutral oil or line it with perforated parchment paper.
  4. Place fillets skin-side down, ensuring they do not touch. Air fry for 7 to 9 minutes until the glaze is a deep mahogany brown and the flesh flakes easily with a fork.
