Ingredients:

  • 340g walleye fillets, skinless and patted dry
  • 15ml avocado oil or melted butter
  • 2 cloves fresh garlic, minced
  • 5g lemon zest
  • 10ml fresh lemon juice
  • 1g smoked paprika
  • 3g kosher salt
  • 1g black pepper
  • 5g fresh parsley, finely chopped

Instructions:

  1. Preheat your air fryer to 200°C (400°F). Pat the walleye fillets extremely dry with paper towels to ensure a firm texture.
  2. In a small mixing bowl, whisk together the avocado oil (or melted butter), minced garlic, lemon zest, lemon juice, smoked paprika, salt, and pepper.
  3. Using a silicone basting brush, coat both sides of the walleye fillets generously with the lemon-garlic mixture.
  4. Place a piece of perforated parchment paper in the air fryer basket. Lay the fillets in a single layer, ensuring they do not touch.
  5. Cook at 200°C (400°F) for 7 to 9 minutes. The fish is done when the thickest part is opaque and flakes easily with a fork.
  6. Carefully remove the fillets and garnish with freshly chopped parsley before serving.
