Ingredients:
- 340g walleye fillets, skinless and patted dry
- 15ml avocado oil or melted butter
- 2 cloves fresh garlic, minced
- 5g lemon zest
- 10ml fresh lemon juice
- 1g smoked paprika
- 3g kosher salt
- 1g black pepper
- 5g fresh parsley, finely chopped
Instructions:
- Preheat your air fryer to 200°C (400°F). Pat the walleye fillets extremely dry with paper towels to ensure a firm texture.
- In a small mixing bowl, whisk together the avocado oil (or melted butter), minced garlic, lemon zest, lemon juice, smoked paprika, salt, and pepper.
- Using a silicone basting brush, coat both sides of the walleye fillets generously with the lemon-garlic mixture.
- Place a piece of perforated parchment paper in the air fryer basket. Lay the fillets in a single layer, ensuring they do not touch.
- Cook at 200°C (400°F) for 7 to 9 minutes. The fish is done when the thickest part is opaque and flakes easily with a fork.
- Carefully remove the fillets and garnish with freshly chopped parsley before serving.
