Ingredients:

  • 6 (6 oz / 170g) Air Fryer Cod Fish Fillets, patted dry
  • 1/2 tsp (3g) Salt
  • 1/2 tsp (1g) Black pepper
  • 1 cup (60g) Panko breadcrumbs
  • 1/4 cup (25g) Grated Parmesan cheese
  • 1 tbsp (4g) Dried parsley
  • 1 tsp (1g) Dried oregano
  • 1/2 tsp (1g) Garlic powder
  • 1/2 tsp (1g) Paprika
  • 2 large Eggs, beaten
  • 1 tbsp (15ml) Fresh lemon juice

Instructions:

  1. Set up three shallow bowls: Bowl 1 with beaten eggs and lemon juice; Bowl 2 with panko, Parmesan, parsley, oregano, garlic powder, and paprika; and a space for seasoned fish.
  2. Season the patted-dry cod fillets with salt and pepper.
  3. Dip a fillet into the egg mixture, letting the excess drip off, then place it in the herb crust mixture.
  4. Firmly press the panko into the fish with your fingers to ensure a thick, secure coating.
  5. Preheat the air fryer to 400°F (200°C) and lightly grease the basket or use parchment liners.
  6. Arrange fillets in a single layer and air fry for 6 minutes.
  7. Carefully flip the fillets and cook for another 6 minutes until the crust is mahogany-colored and the internal temperature reaches 145°F (63°C).
