Ingredients:

  • 1.5 lbs fresh flounder fillets
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp sea salt
  • 0.25 tsp cracked black pepper
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 0.5 tsp dried oregano
  • 0.25 tsp smoked paprika
  • 1 tbsp fresh parsley, chopped
  • 4 lemon wedges

Instructions:

  1. Remove the 1.5 lbs fresh flounder fillets from the fridge 10 minutes before cooking. Taking the chill off ensures even cooking through the center.
  2. Use paper towels to pat both sides of the fillets until they are bone dry. Wait until the paper towel doesn't stick.
  3. In a small bowl, whisk 1 tbsp extra virgin olive oil, 2 cloves minced garlic, 1 tbsp lemon juice, and 1 tsp lemon zest.
  4. Stir in 0.5 tsp sea salt, 0.25 tsp cracked black pepper, 0.5 tsp dried oregano, and 0.25 tsp smoked paprika.
  5. Brush the mixture generously over both sides of the flounder. Use a pastry brush to ensure the garlic bits are evenly distributed.
  6. Set your air fryer to 400°F (200°C) and let it run for 3 minutes. Wait until you feel the heat radiating.
  7. Place fillets in a single layer, ensuring they don't touch. Airflow is what creates the crust.
  8. Cook for 8 minutes. Cook until the edges are golden and the fish flakes with a fork.
  9. Remove carefully and sprinkle with 1 tbsp fresh parsley, chopped.
  10. Serve immediately with 4 lemon wedges for an extra pop of acid.
