Instructions:
- Remove the 1.5 lbs fresh flounder fillets from the fridge 10 minutes before cooking. Taking the chill off ensures even cooking through the center.
- Use paper towels to pat both sides of the fillets until they are bone dry. Wait until the paper towel doesn't stick.
- In a small bowl, whisk 1 tbsp extra virgin olive oil, 2 cloves minced garlic, 1 tbsp lemon juice, and 1 tsp lemon zest.
- Stir in 0.5 tsp sea salt, 0.25 tsp cracked black pepper, 0.5 tsp dried oregano, and 0.25 tsp smoked paprika.
- Brush the mixture generously over both sides of the flounder. Use a pastry brush to ensure the garlic bits are evenly distributed.
- Set your air fryer to 400°F (200°C) and let it run for 3 minutes. Wait until you feel the heat radiating.
- Place fillets in a single layer, ensuring they don't touch. Airflow is what creates the crust.
- Cook for 8 minutes. Cook until the edges are golden and the fish flakes with a fork.
- Remove carefully and sprinkle with 1 tbsp fresh parsley, chopped.
- Serve immediately with 4 lemon wedges for an extra pop of acid.
