Ingredients:

  • 4 (6-oz) Cod Fillets
  • 1.5 tbsp Extra Virgin Olive Oil
  • 1 tsp Smoked Paprika
  • 0.5 tsp Onion Powder
  • 0.5 tsp Sea Salt
  • 0.25 tsp Cracked Black Pepper
  • 2 tbsp Unsalted Butter, cubed and chilled
  • 2 cloves Garlic, minced
  • 1 tbsp Freshly Squeezed Lemon Juice
  • 1 tsp Lemon Zest
  • 1 tbsp Fresh Parsley, finely chopped

Instructions:

  1. Remove cod fillets from the refrigerator 15 minutes before cooking to reach room temperature. Pat each fillet extremely dry with paper towels to ensure a proper sear.
  2. In a small bowl, whisk together the olive oil, smoked paprika, onion powder, sea salt, and black pepper. Brush the mixture generously over all sides of the cod fillets.
  3. Place the seasoned fillets in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 8–12 minutes, or until the internal temperature reaches 140°F (60°C).
  4. While the fish cooks, combine the chilled butter cubes, minced garlic, lemon juice, and lemon zest in a small heat-proof bowl.
  5. Immediately after removing the fish from the air fryer, top each hot fillet with the butter mixture and chopped parsley. Allow the fish to rest for 2 minutes to reach a final internal temperature of 145°F as the butter melts into a glaze.
