Ingredients:
- 4 (6-oz) Cod Fillets
- 1.5 tbsp Extra Virgin Olive Oil
- 1 tsp Smoked Paprika
- 0.5 tsp Onion Powder
- 0.5 tsp Sea Salt
- 0.25 tsp Cracked Black Pepper
- 2 tbsp Unsalted Butter, cubed and chilled
- 2 cloves Garlic, minced
- 1 tbsp Freshly Squeezed Lemon Juice
- 1 tsp Lemon Zest
- 1 tbsp Fresh Parsley, finely chopped
Instructions:
- Remove cod fillets from the refrigerator 15 minutes before cooking to reach room temperature. Pat each fillet extremely dry with paper towels to ensure a proper sear.
- In a small bowl, whisk together the olive oil, smoked paprika, onion powder, sea salt, and black pepper. Brush the mixture generously over all sides of the cod fillets.
- Place the seasoned fillets in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 8–12 minutes, or until the internal temperature reaches 140°F (60°C).
- While the fish cooks, combine the chilled butter cubes, minced garlic, lemon juice, and lemon zest in a small heat-proof bowl.
- Immediately after removing the fish from the air fryer, top each hot fillet with the butter mixture and chopped parsley. Allow the fish to rest for 2 minutes to reach a final internal temperature of 145°F as the butter melts into a glaze.
