Ingredients:
- 1 lb cod fillets, cut into uniform strips
- 1/2 cup all-purpose flour
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp avocado oil spray
- 1/2 cup mayonnaise
- 2 tbsp finely chopped cornichons
- 1 tbsp capers, drained and chopped
- 1 tbsp fresh lemon juice
- 1 tbsp sriracha
- 1 tbsp fresh dill, minced
- 1 clove garlic, grated
Instructions:
- Pat the cod fillets extremely dry with paper towels to prevent steaming and ensure a crispy crust.
- In a medium bowl, whisk together the flour, paprika, garlic powder, salt, and pepper to create the dredge.
- Press each cod strip into the flour mixture, shaking off any excess to ensure a thin, even layer.
- Preheat the air fryer to 400°F (200°C).
- Place the coated fillets in the air fryer basket in a single layer without overlapping.
- Lightly spray the tops of the fillets with avocado oil until the flour looks damp.
- Air fry for 7–8 minutes, flip the fillets using tongs, spray the other side, and cook for another 6–7 minutes until mahogany-colored and flaky.
- While the fish is cooking, combine mayonnaise, cornichons, capers, lemon juice, sriracha, fresh dill, and grated garlic in a small bowl and mix until smooth.
