Ingredients:

  • 1 lb cod fillets, cut into uniform strips
  • 1/2 cup all-purpose flour
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp avocado oil spray
  • 1/2 cup mayonnaise
  • 2 tbsp finely chopped cornichons
  • 1 tbsp capers, drained and chopped
  • 1 tbsp fresh lemon juice
  • 1 tbsp sriracha
  • 1 tbsp fresh dill, minced
  • 1 clove garlic, grated

Instructions:

  1. Pat the cod fillets extremely dry with paper towels to prevent steaming and ensure a crispy crust.
  2. In a medium bowl, whisk together the flour, paprika, garlic powder, salt, and pepper to create the dredge.
  3. Press each cod strip into the flour mixture, shaking off any excess to ensure a thin, even layer.
  4. Preheat the air fryer to 400°F (200°C).
  5. Place the coated fillets in the air fryer basket in a single layer without overlapping.
  6. Lightly spray the tops of the fillets with avocado oil until the flour looks damp.
  7. Air fry for 7–8 minutes, flip the fillets using tongs, spray the other side, and cook for another 6–7 minutes until mahogany-colored and flaky.
  8. While the fish is cooking, combine mayonnaise, cornichons, capers, lemon juice, sriracha, fresh dill, and grated garlic in a small bowl and mix until smooth.
