Ingredients:

  • 1.5 lbs cod fillets, patted dry
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 large egg, beaten
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1.5 cups crushed potato chips
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper

Instructions:

  1. Pat the cod fillets extremely dry using paper towels to prevent steaming and ensure a crispy crust. Season both sides lightly with salt and pepper.
  2. Set up a dredging station. In the first bowl, whisk together the beaten egg, lemon juice, and Dijon mustard. In the second bowl, combine the crushed potato chips, garlic powder, smoked paprika, and cayenne pepper.
  3. Dip each fillet into the egg mixture, allowing the excess to drip off, then press the fish firmly into the potato mixture using your palms to pack the crust onto the fillet.
  4. Preheat the air fryer to 400°F (200°C) and lightly spray the basket with oil. Place fillets in a single layer and spray the tops lightly with oil.
  5. Cook for 10–12 minutes, flipping halfway through, until the crust is mahogany-colored and the fish flakes easily with a fork.
