Ingredients:

  • 1 lb (450g) Fresh Cod Fillets, cut into 1-inch cubes
  • ½ cup (65g) All-purpose flour
  • 2 Large eggs, beaten
  • 1 cup (60g) Panko breadcrumbs
  • 1 tsp (5g) Granulated garlic
  • 1 tsp (5g) Paprika
  • 2 tbsp (30ml) Olive oil spray

Instructions:

  1. Set up a dredging station with three bowls: the first containing flour, the second containing beaten eggs, and the third containing panko mixed with granulated garlic and paprika.
  2. Pat the cod cubes completely dry with paper towels to ensure the breading adheres.
  3. Dip each piece of cod into the flour, shaking off any excess, then submerge in the egg wash, and finally press firmly into the panko mixture until fully coated.
  4. Preheat the air fryer to 400°F (200°C).
  5. Arrange the nuggets in a single layer in the air fryer basket, leaving gaps between pieces for airflow, and spray the tops lightly with olive oil.
  6. Cook for 4 minutes, flip each nugget using tongs, spray the other side with olive oil, and cook for another 4-6 minutes until mahogany-colored and firm.
