Ingredients:
- 1 lb (450g) Fresh Cod Fillets, cut into 1-inch cubes
- ½ cup (65g) All-purpose flour
- 2 Large eggs, beaten
- 1 cup (60g) Panko breadcrumbs
- 1 tsp (5g) Granulated garlic
- 1 tsp (5g) Paprika
- 2 tbsp (30ml) Olive oil spray
Instructions:
- Set up a dredging station with three bowls: the first containing flour, the second containing beaten eggs, and the third containing panko mixed with granulated garlic and paprika.
- Pat the cod cubes completely dry with paper towels to ensure the breading adheres.
- Dip each piece of cod into the flour, shaking off any excess, then submerge in the egg wash, and finally press firmly into the panko mixture until fully coated.
- Preheat the air fryer to 400°F (200°C).
- Arrange the nuggets in a single layer in the air fryer basket, leaving gaps between pieces for airflow, and spray the tops lightly with olive oil.
- Cook for 4 minutes, flip each nugget using tongs, spray the other side with olive oil, and cook for another 4-6 minutes until mahogany-colored and firm.
