Ingredients:
- 1 lb Yukon Gold potatoes, cubed into ½ inch pieces
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tsp lemon zest
- ½ tsp kosher salt
- ¼ tsp black pepper
- 2 (6 oz) cod fillets
- 1 tbsp unsalted butter, melted
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tbsp fresh lemon juice
- ½ tsp kosher salt
- ¼ tsp black pepper
Instructions:
- Cube the potatoes into equal ½ inch pieces. In a large bowl, toss them with olive oil, minced garlic, lemon zest, salt, and pepper until they glisten.
- Pat the cod fillets completely dry using paper towels. Note: Excess moisture creates steam, which prevents the fish from searing.
- Set the air fryer to 400°F (200°C). Place the seasoned potatoes in the basket in a single layer.
- Air fry the potatoes for 12–15 minutes. Shake the basket halfway through until the edges turn mahogany brown.
- Whisk together melted butter, lemon juice, paprika, garlic powder, salt, and pepper in a small bowl.
- Brush the butter mixture generously over both sides of the cod fillets.
- Push the cooked potatoes to the edges of the basket to make a clear space in the center.
- Place the brushed cod fillets in the center of the basket.
- Cook for another 8–10 minutes until the fish flakes easily with a fork and hits 145°F (63°C).
- Let the fish rest for 2 minutes before removing it from the basket.
