Ingredients:

  • 1 lb Yukon Gold potatoes, cubed into ½ inch pieces
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp lemon zest
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 (6 oz) cod fillets
  • 1 tbsp unsalted butter, melted
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tbsp fresh lemon juice
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions:

  1. Cube the potatoes into equal ½ inch pieces. In a large bowl, toss them with olive oil, minced garlic, lemon zest, salt, and pepper until they glisten.
  2. Pat the cod fillets completely dry using paper towels. Note: Excess moisture creates steam, which prevents the fish from searing.
  3. Set the air fryer to 400°F (200°C). Place the seasoned potatoes in the basket in a single layer.
  4. Air fry the potatoes for 12–15 minutes. Shake the basket halfway through until the edges turn mahogany brown.
  5. Whisk together melted butter, lemon juice, paprika, garlic powder, salt, and pepper in a small bowl.
  6. Brush the butter mixture generously over both sides of the cod fillets.
  7. Push the cooked potatoes to the edges of the basket to make a clear space in the center.
  8. Place the brushed cod fillets in the center of the basket.
  9. Cook for another 8–10 minutes until the fish flakes easily with a fork and hits 145°F (63°C).
  10. Let the fish rest for 2 minutes before removing it from the basket.
