Ingredients:
- 4 (6 oz / 170g) cod fillets
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 2 tbsp unsalted butter, melted
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 clove garlic, minced
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Pat the cod fillets completely dry with paper towels. Brush each fillet with olive oil, then evenly coat with a mixture of smoked paprika, garlic powder, salt, and pepper, pressing the spices into the flesh.
- Place fillets in the air fryer basket in a single layer with space between them. Cook at 400°F (200°C) for 8–12 minutes until the fish is opaque and flakes easily with a fork.
- While the fish rests for 2 minutes, combine melted butter, lemon juice, lemon zest, and minced garlic in a small bowl. Stir in the fresh parsley until integrated.
- Drizzle the lemon butter sauce over the hot cod fillets immediately before serving.
