Ingredients:
- 2 (6 oz / 170g) cod fillets
- 1 tbsp (15ml) avocado oil
- 1/2 tsp (3g) garlic powder
- 1/2 tsp (3g) smoked paprika
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1.5g) cracked black pepper
- 1/4 cup (60g) plain Greek yogurt
- 2 tbsp (30g) mayonnaise
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) Dijon mustard
- 2 tbsp (8g) fresh parsley, finely chopped
- 1/4 tsp (1g) garlic powder
Instructions:
- Pat the cod fillets completely dry with paper towels. Note: This prevents the fish from steaming in the basket
- Rub the avocado oil evenly over all sides of the fish.
- Sprinkle garlic powder, smoked paprika, salt, and pepper over the top. Press the spices into the flesh so they don't blow away.
- Place the fillets in the air fryer basket in a single layer. Make sure they don't touch each other.
- Air fry at 400°F (200°C) for 10 minutes until the edges are deep golden brown and the fish flakes easily.
- While the fish is cooking, combine the Greek yogurt, mayonnaise, lemon juice, and Dijon mustard in a bowl.
- Whisk the sauce ingredients until the mixture is smooth and glossy.
- Fold in the chopped parsley and the extra garlic powder.
- Stir in salt and pepper to taste.
- Plate the fish and serve the sauce on the side or drizzled over the top.
