Ingredients:

  • 2 (6 oz / 170g) cod fillets
  • 1 tbsp (15ml) avocado oil
  • 1/2 tsp (3g) garlic powder
  • 1/2 tsp (3g) smoked paprika
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.5g) cracked black pepper
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tbsp (30g) mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) Dijon mustard
  • 2 tbsp (8g) fresh parsley, finely chopped
  • 1/4 tsp (1g) garlic powder

Instructions:

  1. Pat the cod fillets completely dry with paper towels. Note: This prevents the fish from steaming in the basket
  2. Rub the avocado oil evenly over all sides of the fish.
  3. Sprinkle garlic powder, smoked paprika, salt, and pepper over the top. Press the spices into the flesh so they don't blow away.
  4. Place the fillets in the air fryer basket in a single layer. Make sure they don't touch each other.
  5. Air fry at 400°F (200°C) for 10 minutes until the edges are deep golden brown and the fish flakes easily.
  6. While the fish is cooking, combine the Greek yogurt, mayonnaise, lemon juice, and Dijon mustard in a bowl.
  7. Whisk the sauce ingredients until the mixture is smooth and glossy.
  8. Fold in the chopped parsley and the extra garlic powder.
  9. Stir in salt and pepper to taste.
  10. Plate the fish and serve the sauce on the side or drizzled over the top.
