Ingredients:

  • 2 (6-ounce/170g) cod fillets, skinless
  • 1 tablespoon (15 ml) olive oil
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 teaspoon (1.25 ml) black pepper
  • 1/4 teaspoon (1.25 ml) garlic powder
  • 1/4 teaspoon (1.25 ml) paprika
  • 1 tablespoon (15ml) lemon juice
  • 1/2 cup (50g) panko breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese (optional)
  • 1/4 teaspoon (1.25 ml) dried parsley
  • 1/4 teaspoon (1.25 ml) dried dill
  • Pinch of cayenne pepper (optional)

Instructions:

  1. Pat the cod fillets dry with paper towels.
  2. In a small bowl, whisk together olive oil, salt, pepper, garlic powder, paprika, and lemon juice. Brush the mixture evenly over both sides of the cod fillets.
  3. In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese (if using), dried parsley, dried dill, and cayenne pepper (if using).
  4. Place the seasoned cod fillets into the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere to both sides.
  5. Preheat your air fryer to 400°F (200°C) if your model requires preheating.
  6. Carefully place the breaded cod fillets in the air fryer basket, ensuring they aren't touching. You may need to cook in batches depending on the size of your air fryer.
  7. Air fry for 12-15 minutes, or until the cod is cooked through and the breadcrumbs are golden brown. The internal temperature of the cod should reach 145°F (63°C).
  8. Remove the cod from the air fryer and serve immediately.
