- 2 (6-ounce/170g) cod fillets, skinless
- 1 tablespoon (15 ml) olive oil
- 1/2 teaspoon (2.5 ml) salt
- 1/4 teaspoon (1.25 ml) black pepper
- 1/4 teaspoon (1.25 ml) garlic powder
- 1/4 teaspoon (1.25 ml) paprika
- 1 tablespoon (15ml) lemon juice
- 1/2 cup (50g) panko breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese (optional)
- 1/4 teaspoon (1.25 ml) dried parsley
- 1/4 teaspoon (1.25 ml) dried dill
- Pinch of cayenne pepper (optional)
Instructions:
- Pat the cod fillets dry with paper towels.
- In a small bowl, whisk together olive oil, salt, pepper, garlic powder, paprika, and lemon juice. Brush the mixture evenly over both sides of the cod fillets.
- In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese (if using), dried parsley, dried dill, and cayenne pepper (if using).
- Place the seasoned cod fillets into the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere to both sides.
- Preheat your air fryer to 400°F (200°C) if your model requires preheating.
- Carefully place the breaded cod fillets in the air fryer basket, ensuring they aren't touching. You may need to cook in batches depending on the size of your air fryer.
- Air fry for 12-15 minutes, or until the cod is cooked through and the breadcrumbs are golden brown. The internal temperature of the cod should reach 145°F (63°C).
- Remove the cod from the air fryer and serve immediately.
