Ingredients:

  • 1 lb (450g) fresh cod fillets, chilled and cubed
  • 1 large (50g) egg, lightly beaten
  • 1/4 cup (30g) panko breadcrumbs
  • 1 tsp (5g) Old Bay seasoning
  • 1 tsp (2g) lemon zest
  • 1/2 tsp (3g) garlic powder
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (60g) all-purpose flour
  • 1 large (50g) egg, beaten with 1 tbsp (15ml) water
  • 1 cup (60g) panko breadcrumbs
  • cooking oil spray

Instructions:

  1. Place the cubed cod, egg, 1/4 cup panko, and seasonings into the food processor. Pulse 5-8 times until the mixture is combined and resembles a coarse paste, avoiding over-processing.
  2. Shape the mixture into 1-inch (2.5cm) balls.
  3. Roll each ball in the flour (shaking off excess), dip in the beaten egg mixture, and finally coat thoroughly in the panko, pressing lightly to ensure adherence.
  4. Preheat the air fryer to 400°F (200°C) and spray the basket generously with oil.
  5. Place the cod balls in a single layer without touching, spray the tops with oil, and air fry for 8-10 minutes, flipping halfway through, until deep golden brown.
