Ingredients:
- 1 lb (450g) fresh cod fillets, chilled and cubed
- 1 large (50g) egg, lightly beaten
- 1/4 cup (30g) panko breadcrumbs
- 1 tsp (5g) Old Bay seasoning
- 1 tsp (2g) lemon zest
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1.5g) salt
- 1/2 cup (60g) all-purpose flour
- 1 large (50g) egg, beaten with 1 tbsp (15ml) water
- 1 cup (60g) panko breadcrumbs
- cooking oil spray
Instructions:
- Place the cubed cod, egg, 1/4 cup panko, and seasonings into the food processor. Pulse 5-8 times until the mixture is combined and resembles a coarse paste, avoiding over-processing.
- Shape the mixture into 1-inch (2.5cm) balls.
- Roll each ball in the flour (shaking off excess), dip in the beaten egg mixture, and finally coat thoroughly in the panko, pressing lightly to ensure adherence.
- Preheat the air fryer to 400°F (200°C) and spray the basket generously with oil.
- Place the cod balls in a single layer without touching, spray the tops with oil, and air fry for 8-10 minutes, flipping halfway through, until deep golden brown.
