Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 1/2 teaspoon (2.5ml) kosher salt
- 1/4 teaspoon (1.25ml) black pepper
- 1 tablespoon (15ml) cornstarch
- 1/2 cup (60g) all-purpose flour
- 2 large eggs, lightly beaten
- 1 cup (85g) sweetened shredded coconut, finely ground
- 1/2 cup (50g) panko breadcrumbs
- 1/4 teaspoon (1.25ml) garlic powder
- 1/4 teaspoon (1.25ml) onion powder
- Non-stick cooking spray
- Lime wedges (optional)
Instructions:
- Pat shrimp dry with paper towels. Season with salt, pepper, and cornstarch. Toss to coat evenly.
- Place flour in the first dish, beaten eggs in the second, and combine coconut, panko breadcrumbs, garlic powder, and onion powder in the third.
- Dip each shrimp in the flour, then the egg, and finally the coconut mixture, ensuring a complete coating. Press gently to adhere.
- Arrange the breaded shrimp on a plate lined with parchment paper. Cover and refrigerate for at least 30 minutes.
- Preheat air fryer to 400°F (200°C).
- Lightly spray the air fryer basket with cooking spray. Arrange shrimp in a single layer. Cook for 8-10 minutes, flipping halfway, until golden brown.
- Serve hot with your favorite dipping sauce and lime wedges.
