Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 1/2 teaspoon (2.5ml) kosher salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 1 tablespoon (15ml) cornstarch
  • 1/2 cup (60g) all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup (85g) sweetened shredded coconut, finely ground
  • 1/2 cup (50g) panko breadcrumbs
  • 1/4 teaspoon (1.25ml) garlic powder
  • 1/4 teaspoon (1.25ml) onion powder
  • Non-stick cooking spray
  • Lime wedges (optional)

Instructions:

  1. Pat shrimp dry with paper towels. Season with salt, pepper, and cornstarch. Toss to coat evenly.
  2. Place flour in the first dish, beaten eggs in the second, and combine coconut, panko breadcrumbs, garlic powder, and onion powder in the third.
  3. Dip each shrimp in the flour, then the egg, and finally the coconut mixture, ensuring a complete coating. Press gently to adhere.
  4. Arrange the breaded shrimp on a plate lined with parchment paper. Cover and refrigerate for at least 30 minutes.
  5. Preheat air fryer to 400°F (200°C).
  6. Lightly spray the air fryer basket with cooking spray. Arrange shrimp in a single layer. Cook for 8-10 minutes, flipping halfway, until golden brown.
  7. Serve hot with your favorite dipping sauce and lime wedges.
