Ingredients:

  • 4 (6 oz / 170g) Cod fillets, patted dry
  • 2 tbsp (30ml) Olive oil
  • 1 tsp (5g) Garlic powder
  • ½ tsp (3g) Smoked paprika
  • ½ tsp (3g) Sea salt
  • ¼ tsp (1g) Cracked black pepper
  • 1 cup (150g) Cherry tomatoes, quartered
  • 2 cloves (6g) Garlic, minced
  • ¼ cup (15g) Fresh basil, chiffonade
  • 4 oz (113g) Fresh mozzarella, diced small
  • 1 tbsp (15ml) Extra virgin olive oil
  • 1 tbsp (15ml) Balsamic glaze

Instructions:

  1. Pat the cod fillets extremely dry with paper towels to ensure searing instead of steaming.
  2. Rub the fillets with olive oil, then evenly coat with garlic powder, smoked paprika, salt, and pepper.
  3. In a small bowl, combine quartered cherry tomatoes, minced garlic, olive oil, and half of the fresh basil.
  4. Place the seasoned cod in the air fryer basket.
  5. Top each fillet with a generous layer of diced mozzarella, then spoon the tomato mixture over the cheese.
  6. Set the air fryer to 400°F (200°C) and cook for 8–12 minutes until the mozzarella is bubbling and golden-brown, and the tomatoes have slightly blistered edges.
  7. Remove carefully with tongs and immediately drizzle with balsamic glaze and the remaining fresh basil.
