Ingredients:
- 1 pint (approx. 16 oz) Fresh Shucked Oysters
- 1/2 cup Cornstarch
- 2 Large Eggs, beaten
- 1 tbsp Hot Sauce
- 1 1/2 cups Panko Breadcrumbs
- 1 tsp Old Bay Seasoning
- 1/2 tsp Garlic Powder
- High-smoke-point oil spray (Avocado or Grapeseed)
- 3 tbsp Unsalted Butter, melted
- 2 cloves Garlic, minced
- 1 tsp Fresh Parsley, chopped
Instructions:
- Drain the oysters in a fine-mesh sieve and pat them extremely dry with paper towels to ensure a crispy texture.
- Dredge each oyster in cornstarch, shaking off the excess until only a light, translucent film remains.
- Whisk the eggs with the hot sauce in a shallow bowl. In another bowl, combine panko, Old Bay, and garlic powder.
- Dip each floured oyster into the egg wash, then press firmly into the panko mixture to create a thick coating.
- Place oysters in a single layer in the air fryer basket and mist generously with high-smoke-point oil spray.
- Air fry at 400°F (200°C) for 8 minutes total, flipping halfway through and applying a second oil mist for a golden finish.
- Whisk together melted butter, minced garlic, and parsley; drizzle over the hot oysters immediately before serving.
