Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons (30ml) olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons (30ml) honey
  • 2 tablespoons (30ml) soy sauce (low sodium preferred)
  • 1 tablespoon (15ml) rice vinegar (or apple cider vinegar)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon (15ml) fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp butter
  • Cooked pasta or rice for serving (optional)

Instructions:

  1. Pat the shrimp dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds, careful not to burn it!).
  3. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, until pink and cooked through.
  4. While shrimp is cooking, prepare the sauce. In a small bowl, whisk together honey, soy sauce, and rice vinegar and melt butter.
  5. Pour the honey garlic sauce over the shrimp. Add the red pepper flakes (if using). Bring to a simmer and cook for another minute, until the sauce has slightly thickened and coats the shrimp evenly.
  6. Remove from heat. Garnish with fresh parsley. Serve immediately over pasta, rice, or with crusty bread.
