Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 2 tablespoons (30ml) olive oil
- 4 cloves garlic, minced
- 2 tablespoons (30ml) honey
- 2 tablespoons (30ml) soy sauce (low sodium preferred)
- 1 tablespoon (15ml) rice vinegar (or apple cider vinegar)
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon (15ml) fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp butter
- Cooked pasta or rice for serving (optional)
Instructions:
- Pat the shrimp dry with paper towels and season with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds, careful not to burn it!).
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, until pink and cooked through.
- While shrimp is cooking, prepare the sauce. In a small bowl, whisk together honey, soy sauce, and rice vinegar and melt butter.
- Pour the honey garlic sauce over the shrimp. Add the red pepper flakes (if using). Bring to a simmer and cook for another minute, until the sauce has slightly thickened and coats the shrimp evenly.
- Remove from heat. Garnish with fresh parsley. Serve immediately over pasta, rice, or with crusty bread.
