Ingredients:
- 4 Mahi Mahi fillets (about 6 oz each, 1 inch thick)
- 2 Tbsp Extra Virgin Olive Oil
- 1/4 cup Fresh Lime Juice
- 1/4 cup chopped fresh Cilantro
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1 tsp Garlic Powder
Instructions:
- Combine the extra virgin olive oil, fresh lime juice, cilantro, salt, black pepper, and garlic powder in a small bowl to create the quick marinade.
- Place the Mahi Mahi fillets in a shallow dish. Pour the marinade over the fish, ensuring both sides are coated. Due to the acid content, marinate for a maximum of 2 minutes only.
- Preheat your grill to high heat (450°F to 500°F). Lightly oil the grill grates to prevent sticking.
- Remove the fillets from the marinade and place them on the hot grill. Grill for 3.5 to 4 minutes per side until the internal temperature reaches 145°F and the fish is opaque and flakes easily with a fork.
- Remove from the grill and serve immediately.
